A new upscale restaurant has opened in Koror, adding another waterfront dining option to Palau’s growing tourism and hospitality sector.

KOROR, Palau — A new high-end waterfront dining destination has opened in Koror, adding a Mediterranean-inspired restaurant, bar and lounge to the city’s growing hospitality scene.

M-Dock, the newest offering from Four Seasons Explorer Palau, officially opened following a Sept. 29 cocktail reception attended by President Surangel Whipps Jr., First Lady Valerie Whipps and senior government and business leaders.

Located at the home port marina of the 39-meter (128-foot) Four Seasons Explorer, M-Dock offers views of Palau’s waters while combining Mediterranean cuisine with locally sourced seafood and island produce.

The restaurant is open to both locals and visitors and is designed as a social hub for guests before and after their voyages aboard the luxury catamaran.

Its menu features dishes such as freshly caught ceviche and tuna carpaccio, along with handmade pastas prepared with organic eggs from Koror, local lobster and vongole. Herbs and microgreens are grown by the M-Dock team.

The restaurant also offers cocktails ranging from zero-proof to full-proof selections, specialty coffees and a wine list designed to encourage exploration. Nightly DJs provide music as the restaurant transitions from sunset into evening.

M-Dock opens daily at 10 a.m. for drinks and specialty coffees. The Golden Pour runs from 5 to 7 p.m., followed by dinner from 7 to 11 p.m.

The opening marks an expansion of Four Seasons Explorer’s luxury experience from the sea to the Palau waterfront.

“This is a place to linger over bold dishes with island accents,” Four Seasons said in announcing the new venue, describing the concept as a meeting of “Mediterranean spirit” and a “Pacific state of mind.”

The Sept. 29 opening reception gave invited guests a preview of the restaurant, including a selection of signature dishes and handcrafted beverages from its Mediterranean-inspired menu.

The event was hosted by Armando Kraenzlin, regional vice president of Four Seasons Resorts Maldives, Bali, Palau and Mumbai, and his team. Attendees included state ministers, ambassadors, governors, members of the Senate and Legislature board, representatives of the Palau Visitors Authority, business leaders and members of the media.

M-Dock also serves as a gateway to Four Seasons Explorer, allowing guests to transfer directly from the restaurant’s jetty to the floating resort aboard one of two company speedboats.

The 39-meter Four Seasons Explorer accommodates up to 22 guests in 10 staterooms and one Explorer Suite. The vessel combines the amenities of a luxury resort with the experience of traveling by sea.

On board, guests have access to a restaurant, bar, library, spa nook and a PADI 5-Star Dive Centre. The resort also offers customized experiences ranging from castaway beach picnics to locally inspired wellness activities.

Four Seasons Explorer offers daily embarkations and disembarkations with no minimum stay, allowing travelers to tailor their stays to their schedules.

With M-Dock and Four Seasons Explorer operating together, Four Seasons is positioning the Koror waterfront restaurant as an extension of its luxury cruising experience, connecting dining on shore with customized experiences at sea.

The new restaurant adds another upscale dining option to Koror while bringing together Palau’s seafood and island produce with Mediterranean-inspired cuisine and a day-to-night waterfront setting.
