Overview:
Palau has taken a fresh step toward healthier school meals with its first-ever School Chef Cooking Competition, bringing together the Taiwan Technical Mission, Palau Community Action Agency and Japan International Cooperation Agency. The July 28 event challenged school chefs to turn locally grown produce into nutritious, child-friendly dishes, with organizers planning to share the winning recipes across schools nationwide.
In a landmark trilateral collaboration, the Taiwan Technical Mission (TTM), in partnership with the Palau Community Action Agency (PCAA) and the Japan International Cooperation Agency (JICA), hosted the nation’s first-ever “School Chef Cooking Competition” on July 28, 2026. The event aimed to elevate the quality of school meals and promote the integration of locally grown produce into children’s daily diets.

Prior to the main event, TTM and JICA conducted comprehensive professional training workshops for the participating chefs. The preparatory sessions focused on maximizing the nutritional benefits of indigenous fruits and vegetables, enhancing food safety standards, and designing balanced meal plans tailored for early childhood nutrition.
Four teams competed in the contest, featuring fresh eggplants harvested directly from TTM’s farm as the mandatory spotlight ingredient. Demonstrating exceptional creativity and culinary skill, the chefs crafted eight innovative, highly nutritious dishes designed specifically for young palates.
The distinguished judging panel comprised Key leaders from key sectors, including Director of the Bureau of Agriculture Jodean Remengesau, JICA Chief Representative Aoki Tsunenori, PCAA Executive Director Darren Fritz, Ministry of Education Representative Mitchel Rekemsik, and TTM Leader Benjamin Tsai.
Off the competition floor, participants admitted to feeling initial nerves, but shared that their passion for cooking and dedication to the children’s well-being took over as soon as they stepped into the kitchen. Their commitment to student health resonated deeply with the audience and judges alike.
Following the success of the event, the organizing partners announced that all eight original recipes will be published and distributed to school chefs across Palau. The initiative hopes to advocate for the regular inclusion of fresh, locally sourced agricultural products in school lunch programs, paving the way for better dietary balance and long-term health for Palauan youth.
