BARRIGADA, Guam – Indian flavors took center stage at The Guam Capitol Kitchen on February 21 and 22 as The Taj Palau delivered a special two-night dining experience to the island. The event, led by The Taj Palau’s Owner and General Manager, Chef Robert John Scaria, and his team of three chefs, served 600 guests over two fully booked evenings, with more than 150 additional diners on the waiting list.
“It was an amazing trip and appreciation from Guam residents,” said Chef Robert John Scaria. “So I went to Guam with three of my chefs and did a big two nights of dinner, and we cooked for 600 people, and the restaurant was fully booked, with another 150-plus on the waiting list.”
At $80 per guest, the all-you-can-eat buffet event generated approximately $48,000 in revenue, with demand far exceeding available seating. The strong turnout underscored the growing appreciation for authentic Indian cuisine in the region.
The event was hosted in partnership with the Guam Capitol Kitchen’s Chef Casey Castro, President of the Guam Capitol Kitchen. The collaboration with Chef Scaria and his team brought together a fusion of culinary expertise, offering Guam diners a unique and flavorful experience.
The Guam Capitol Kitchen, which originally opened to the public in July 2022, faced a major setback when Typhoon Mawar struck on May 19, 2023, heavily damaging the restaurant just ten months after its grand opening. The damage forced a temporary closure, but after months of rebuilding, The Guam Capitol Kitchen reopened its doors on November 30, 2023, welcoming back diners with its signature hospitality and innovative cuisine. Since then, The Guam Capitol Kitchen has been rolling out meals and selling out seat reservations, proving that anything is possible when the job is something you’re passionate about.
The Taj Palau has long been recognized for its excellence in Indian cuisine. In 2022, it was awarded Palau’s Best Restaurant by the World Culinary Awards, a testament to its commitment to authentic flavors and high-quality dining.
